Cheyenne and Landon are finally both old enough to semi-enjoy snow days. We did the whole go outside, play in the snow thing.... that lasted a whole 5 minutes. When we returned inside the thawing began and with it came tears! The tingling and burning of little fingers thawing was just too much to handle I guess.
We had a lovely semi-healthy dinner of BBQ meatballs, steamed broccoli, and fresh cantaloupe. But the kicker was when my friend Angela posted THIS picture on facebook--

I haven't had monkey bread since HIGH SCHOOL! A husband, degree, and three kids later I decided it was time to introduce my sweet family to this sweet treat!
I immediately asked Angela for the recipe and this is the magic she shared-

The Problem: I DIDN'T GET SNOW DAY NECESSITIES! and I am probably the only wife in American without a bundt pan.
Solution: Do what I always do! Use the recipe as an inspiration and make it up as I go of course!
So along with this delightful recipe I also used this - because I only had Bisquick (although I didn't use the idea from it, it just gave me confidence in using the Bisquick) and this - because I didn't have a bundt pan, but I did find a loaf pan.
So it began. I gathered my ingredients and preheated my over to 400 degrees...
In case you want it in list form the ingredients included:
- Bisquick
- Almond Milk
- Brown Sugar
- Pure Cane Sugar
- Cinnamon
- Extra Virgin Olive Oil- or non stick cooking spray
- Margarine- melted
First we, my lovely assistant and I, mixed the Bisquick according to the box for making biscuits in one bowl (I did end up adding a little extra liquid than what the box recommended) and then combined 1/2 cup of sugar and cinnamon to taste in a separate bowl.
We began rolling the Bisquick into small balls and then rolling them around in the sugar cinnamon mix.
It was STICKY so I wound up doing the rolling. The size of each were slightly smaller than my palm- but could have been smaller to be less biscuit-y in the end.
Once all of the balls were rolled and sugared they looked like this. I kept wanting to add more, but reminded myself "THIS IS BISCUIT MIX IT WILL GET BIGGER!" I always forget that when making dumplings [whoops]!
The kicker came from the original inspiration to add a butter + brown sugar mix to the top!
We mixed 1/2 cup melted margarine and 1 cup brown sugar and then poured it on!
MMMMMMM
It cooked in a 400 degree oven for 20-27 minutes. Just a note... the longer it goes the crispier the sugar gets and the harder the butter mixture gets!
When it is all finished it will look something like this...
It was slightly biscuit-y but I think it could have been solved by slightly smaller rolls.
I attempted to turn it over onto a plate and it was so nicely "pull-apart" that this is the result. Nevertheless the kids and husband devoured it and I had to sneak it away into some Tupperware so that we would have some left over for tomorrow!
I hope you enjoy this as much as we did. Get fancy with it and make it your own. I never completely follow a recipe... I am a woman after all, I must know best! ;)
